Mushroom Spinach Soup

DELISH and oh so easy soup

 INGREDIENTS

8 oz. fresh spinach

1 bold NY yellow onion chopped

1 bag frozen shitake mushrooms

1 box veggie broth (I used Emeril’s)

2 tsp. butter

DIRECTIONS

Melt butter. Saute onion. And mushrooms. When tender add spinach. When wilted add broth.

Enjoy immediately. Leftovers taste great a couple of days later.
